Ingredients:

  • Duck drumstick (medium size) - 1 pc.
  • Honey - 20 g
  • Salt and pepper
  • Rosemary - 1 sprig
  • Thyme - 1 sprig
  • Worcestershire sauce - 3 g
  • Olive oil - 10 g
  • Kumquat (or other citrus fruit) - 30 g
  • Cranberry (s / m) - 10 g
  • Sugar - 5 g
  • Water






Preparation:

1. Prepare the ingredients.

2. Duck leg process and remove the second bone.

3. Season with salt and pepper, brush with olive oil, Worcestershire sauce and honey. Inside invest on thyme and rosemary. Leave on for 10-15 minutes.

4. Wrap the duck leg in a pear shape and stab skewers.

5. Fry the leg on a hot skillet until golden in color.

6. Add the filtered water, salt, rosemary and thyme.

7. Bring to a boil.

8. Cover tightly with foil.

9. Simmer in the oven at 175-180 degrees 1.5 - 2 hours.
