Cream Of Green Peas And Zucchini With Mint Recipe |
Ingredients for 4 servings:
- Olive oil - 2 tsp
- Large onion, finely chopped - 1 pc.
- Crushed garlic - 2 tooth.
- Potatoes peeled, coarsely chopped - 2 pcs. (Approximately 300 g)
- Water or any broth - 1 liter
- Peas (can be frozen) - 2 1/2 stack. (About 375 g)
- Zucchini or zucchini, coarsely chopped - 2 pcs. (Approximately 300 g)
- Mint leaves chopped - 1/4 stack.
Preparation:
1. Heat the oil in a skillet over medium heat. Add the onion and cook, stirring occasionally, 5 minutes until soft.
2. Add the garlic.
3. Add potatoes and water or broth (my beef).
4. Increase the heat and bring to a boil. I had fresh peas, and I put it immediately after the boiled potatoes. Frozen peas need to be put at the end, along with the zucchini.
5. After boiling, reduce heat and cook 8 minutes, until almost cooked potatoes. Add zucchini (and peas if using frozen) and cook for another 5-7 minutes until cooked vegetables.
6. Add the mint and. Season with salt and pepper. Serve with green onions.
