Ingredients:
- 4 tablespoons unsalted butter, melted
- 3 tablespoons brown sugar
- 3 tablespoons soy sauce
- 2 tablespoons lemon juice
- 2 tablespoons white wine
- 1 fillet (900 g) salmon, cut into 4 portions
- 1 cup whipping cream
- 1/4 cup grainy mustard
- 1 teaspoon Dijon mustard
- 4 teaspoons Worcestershire sauce
- 1/2 teaspoon dried basil
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon white pepper
- 1/4 teaspoon red cayenne pepper
- 1 cup sour cream
How to cook:
In a small bowl, combine butter, brown sugar, soy sauce, lemon juice and wine. Put the fillet in a plastic bag and pour the marinade back. Close the bag and place in refrigerator for 1-6 hours.Heat the oven to 230 degrees. Put the fish and marinade in a baking dish and return to the oven for 20 minutes. Then, then another 2 minutes under the broiler.
For the sauce in a saucepan, combine cream, mustard, Worcestershire sauce, basil, and all kinds of peppers. Cook, stirring, over medium heat until thickened about 5 minutes. Add sour cream and mix well. Serve salmon with sauce.
