Ingredients:
- 300 g flour
- 150 g of the oil
- pinch of salt
- 8 tablespoons ice water
- 500 g hot-smoked fish
- a handful of raw almonds
- slice of bread
- a few sprigs of parsley
- 50 g flour
- 50 g butter
- 650 ml milk
How to cook:
To test put cold butter, salt and flour in processor and chop so that the pieces of butter are the size of a pea.In breadcrumbs to make recess pour water and knead the dough elastic. It should be visible pieces of butter.
Prepare bechamel sauce. For this oil over medium heat in a saucepan melt and warm. From it must evaporate moisture, that is, it must cease to hiss.
Stir in the flour and butter sauté 5 minutes until you feel a pleasant nutty flavor. Flour does not stick together in clumps, because the moisture evaporated.
Replace the spoon on the corolla. Pour in the milk (about three portions), stirring well each time, until smooth and disappearance of lumps. Stir vigorously.
Boil the sauce a few minutes, so it was not too "floury" taste, although the main thing here though - good fry flour. Usually the sauce can add salt, but here I do not I salt - salt in the fish sometimes even too much.
Cover the sauce film so that it is adjacent to the surface and was not formed foam.
Clean the fish and remove the bones.
Roll out the dough and place them shape. Put the dough on the fish pieces. Pour sauce them.
Sauce should be enough for the whole pie to fish to be seen. Pepper.
Now combine nuts, and then add the bread and grind into a fine crumb. Stir in the parsley and stir.
Sprinkle the cake.
Bake for 35-40 minutes at 180°C.
