Bouillabaisse Of Salted Cod And Potatoes Recipe

Ingredients:

  • Olive oil - 5 tbsp
  • Onions - 2 heads
  • Garlic - 3 cloves
  • Tomatoes - 2 pcs.
  • Spices - 1 pinch
  • Potatoes - 1 kg
  • Saffron - ½ teaspoon
  • Salted cod fillet - 400 g
  • Salt - to taste



How to cook:

1. In a large, heavy pot, heat the oil. Place the finely chopped onion and fry for 5 minutes, stirring occasionally, until onion is soft and translucent. Add the crushed garlic first, but after a few minutes of chopped tomatoes and cook, stirring, for 5 minutes.
2. Pour 2 liters of water. Potatoes cut into pieces of 1.5 cm across the width and add the same with herbs. Bring water to a boil.
3. In a mortar grind the saffron, pour in a couple of spoonfuls of broth from the boiler, stir and return back to the boiler. Simmer, not boiling, about 20 minutes Dry cod, soaked overnight, remove skin and bones and separate the flesh into large flakes.
4. Put the fish in a pot and simmer for another 10 minutes, until cooked potatoes. Season to taste with salt bouillabaisse and serve it immediately, garnished with toasted bread.
