Ingredients:
- 450g spaghetti or linguine
- 1 tablespoon olive oil
- 2 cloves of garlic, squeeze
- 240 grams spinach
- 2 avocados
- 15 g of parsley
- 2 teaspoons lemon juice
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- 3/4 cup of water in which the pasta was cooked
- 1/4 cup grated Parmesan cheese
- red pepper flakes
Preparation:
In a large saucepan, boil the pasta in salted water until al dente state. 1 glass of water, leave. While pasta cooks, heat over medium heat a tablespoon of olive oil. Fry the garlic for a minute. Add the spinach to the skillet and cook for 2-3 minutes.In a blender, whip fried spinach, avocado, parsley, lemon juice, salt and pepper. Whisk until smooth. Gradually pour in 3/4 cup of water in which the pasta was cooked, then cheese. All whisk thoroughly. In a large bowl, combine hot cooked pasta with sauce. Sprinkle with additional cheese and red pepper flakes. Serve.
