Tomato Broccoli Frittata Recipe

Ingredients:
- 12 organic medium eggs
- 1 head of broccoli
- 2 tomatoes
- 3 tbsp raw butter
- 2 cups Swiss cheese
- 1 clove garlic minced
- 1 yellow onion minced
- 2 leaves of fresh basil minced
- cayenne pepper
- sea salt
How to cook:
Preheat oven to 400 degrees.Saute onions and garlic in 10-12" pan with 2 tbsp of butter on medium to low heat until caramelized.
Cut off broccoli stem and rinse broccoli well.
Chop up broccoli until very small, add to caramelized onions with 1 tbsp of butter, cover with lid and cook for 10 minutes, stirring occasionally.
Cut tomatoes in fours, pull out center, rinse off seeds and sprinkle on broccoli and onions.
Whisk eggs in a bowl, pour over vegetables in pan and sprinkle with cheese.
Place entire pan in oven and bake for 10-15 minutes or until eggs are firm.
Salt and pepper to taste and sprinkle with basil.
