Pumpkin Soup Recipe
Ingredients:
- 4 liters of chicken broth
- 500-600 grams of pumpkin
- 2 cloves of garlic
- 2 onions
- 200 grams of turkey or chicken sausages for grilling
- half a teaspoon of paprika
- teaspoon of Provence herbs
- pinch (small) red chili peppers
- cream 10% - 100-150 ml
- Figure 3 tablespoons
- salt broth to taste
- olive oil (refined) for frying
Preparation:
1 pumpkin cleaned from the middle and skins, cut into cubes and send to the broth, along with a clove of garlic.2 Bring to a boil and continue to cook over low heat until soft pumpkin. In a frying pan fry in olive oil is not very finely chopped onion and sliced sausage mugs.
3 In a separate saucepan, cook rice on low heat (min 15).
4 The cooked pumpkin harvested from the broth and puree in blender break. Send it back to the broth, there put fried onions with sausage and rice-cooked.
5 Add all the spices, bring to a boil, boil for another 10 minutes at the end of cooking to introduce cream soup.
6 Serve with garlic croutons (light bread cut into cubes, dried in a dry frying pan and mix with the crushed garlic clove).
