Ingredients:
- 1/2 onion
- 2 tablespoons olive oil
- 2 cloves of garlic
- 800 grams of tomato puree
- 1 teaspoon oregano
- 1 teaspoon sugar
- 3/4 teaspoon salt
- 4 chicken breasts
- 2 eggs
- salt to taste (for chicken breasts)
- 50g breadcrumbs
- oil for frying
- 100g parmesan
- 8 fresh basil leaves
- 120g mozzarella cheese or edam cheese
Preparation:
1) Grill the onions and place in a deep saucepan.2) Add 2 tablespoons of olive oil soup and heat over medium heat.
3) Fry for 2-3 minutes.
4) Press the garlic through a press and add the onions and fry for 1 to 2 minutes.
5) Add tomato puree (tomatoes chopped in a blender or using a press for potatoes).
6) Add the oregano, sugar, salt.
Mix 7) Good and boil, reduce heat and simmer for 10-12 minutes uncovered - then remove from heat and set aside.
8) Add salt to chicken breasts.
9) Preheat oven to 200 degrees C.
10) Beat the eggs with a pinch of salt in a bowl, put in another cup of bread crumbs and grated on a fine grater cheese.
11) Pour the oil in a separate pan.
12) Dip each chicken breast first in the egg, then in bread crumbs and Parmesan cheese in the pan - fry on both sides until golden brown.
13) Prepare an ovenproof dish, pour it over the lower half of the tomato sauce on top of cooked chicken breasts develop.
14) Cover the rest of the tomato sauce and fresh basil and sprinkle with mozzarella or edam cheese.
15) Bake in the oven for 20-25 minutes.
