Fried Mushrooms Recipe

Ingredients:
- 400 g small mushrooms
- 3 tablespoons vegetable oil
- 3-4 large cloves of garlic
- 60 ml. sherry
- juice and zest of half a lemon medium
- small bunch of parsley
- pinch of cayenne pepper
- salt to taste
Preparation:
Mushrooms thoroughly wash and wipe dry with paper towels. Garlic and parsley finely chop.In a frying pan warm up the oil on the fire a little stronger than average. Put the mushrooms and fry, stirring occasionally until golden brown, about 8-12 minutes.
Add the garlic to the pan and fry, stirring occasionally, for about 45 seconds.
Pour the sherry and cook, stirring, for about 1 minute.
Add lemon juice and zest, cayenne pepper and salt. Fry for 30 seconds.
Remove from the heat, add the parsley and stir. Serve it warm.
