Cookies are typically high in carbohydrate content due to their main ingredients; flour and sugar. Most regular cookies net about fifteen grams or more carbohydrate per cookie. For those with diabetes, 48 grams of net carb for two cookies is a high price to pay.

By replacing wheat and sugar with almond flour and the sugar substitute Splenda, the carb content for these low carb cookies is only 2.2 grams per cookie. For those following The Metabolism Miracle or The Diabetes Miracle, these cookies are neutral.

Ingredients:

  • 1/2 c Softened butter
  • 1 1/2 c Almond Flour
  • 1 c Splenda or sucralose
  • 1 oz Egg
  • 1 tsp Vanilla
  • 1/4 tsp Baking Soda
  • 1/4 tsp Cream of tartar
  • 4 tbsp Splenda or sucralose
  • 2 tsp Ground Cinnamon

How to cook:

Preheat oven to 350 F
In a medium mixing bowl, beat butter for 30 seconds
Add half the almond flour, half the Splenda, egg, vanilla, baking soda, and cream of tartar and beat together until well blended.
Beat in remaining almond flour and Splenda and mix well
Cover mixing bowl, place in refrigerator, and chill for at least one hour
On a small saucer, mix 4 tablespoons of Splenda or sucralose and 2 tsp ground cinnamon and set aside
Shape chilled dough into walnut sized balls and roll in Splenda and cinnamon mixture until all sides are coated.
Place coated cookie balls on a cookie sheet about 2 inches apart
Using the bottom of a drinking glass, slightly flatten the cookie ball.
Bake for 12-14 minutes until bottoms are golden in color
These cookies store best in the freezer.
