Ingredients:
- For the pancakes:
- 225 g flour
- 1 teaspoon nutmeg
- 2 large eggs, beaten
- 1 large egg yolk, beaten
- 350 ml milk
- 1 tablespoon melted unsalted butter
Preparation:
Sift flour with salt and nutmeg. Add the beaten eggs and egg yolk, milk, melted butter and whisk whisk until smooth. Melt a little butter in a frying pan and fry the pancake on it until lightly brown. Then turn and fry the other side. Repeat with remaining batter, should have about 5-8 pancakes.Filling:
- 55 g unsalted butter
- 2 shallots, finely chop
- 1 clove garlic, squeeze
- 500 g of different mushrooms, finely chopped
- 225 g mozzarella, cut into cubes
- 85 g parmesan
- 225 g ricotta
- bunch of basil
- sea salt and black pepper
Preparation:
